Definitely tough with low light and movement. Not much you can do really. There are several apps for shooting I prefer- Camera+ and a new one 645Pro. NightCap is an app that is specifically made for shooting in low light but movement again is a problem.

I see you process on desktop. There are several apps that are very good for processing on the iphone. Camera+ for one has a Clarity filter that can really pull out the shadows. Filterstorm is the most powerful app. Closest thing to Photoshop.

Sorry not of more help but it definitely isnt a 5D Mark II ;-)

I don't understand, why are you teaching a class on producing photos with consumer-level cameras when your whole post seems to be against using consumer-level cameras? Perhaps you should reconsider this workshop.
